I have been teaching math, statistics, data science, and computer science at the university level for 23 years, but I've also provided math enrichment activities for middle and high school aged students as well.
I think lessons are best when they're tailored for each individual student, both in terms of length and format. Sometimes lessons should focus on explanation and sometimes they should focus on practice. Also, some lessons may be shorter than others if the material is particularly difficult or the student is fatigued. In short, I believe in being flexible.
